Vietnamese Spring Roll or Gỏi Cuốn is a Vietnamese appetizer dish made with pork, shrimp, rice vermicelli noodle, lettuce and herbs wrapped in thin rice paper. It is served with pickled vegetables and dipping fish sauce. For easier wrapping, make roll over a damp paper towel.

Vietnamese Spring Roll or Gỏi Cuốn is a Vietnamese appetizer dish made with pork, shrimp, rice vermicelli noodle, lettuce and herbs wrapped in thin rice paper. It is served with pickled vegetables and dipping fish sauce.
Ingredients
- 1 pound Shrimp Large cooked, shelled, deveined and halved lengthwise
- 1 pound Pork Belly or leaner Pork Loin cooked, cut into 1/4 inch slices
- 1 bag Rice Vermicelli Noodle cooked according to instruction
- 1 bag Rice Paper round, 8 inch diameter
- 2 heads Red Leaf Lettuce leaves separated, washed
- 1 bag Bean Sprouts (24oz) can be substituted with 3 Cucumbers (sliced lengthwise into thin 1/4 inch slices)
- 1 bundle Mint
- 1 bundle Cilantro
- 1 bundle Chives optional
Instructions
- Place a damp paper towel sheet on a flat surface. Dip rice paper in warm water and place on top of the paper towel.
- Place 3 slices of shrimp red side facing down below the center line and 1 slice of pork next to and above the shrimps.
- Place one piece of red leaf lettuce on top of the shrimps and pork then add some rice vermicelli noodles.
- Fold the left and right side of the rice paper in over the noodles and herbs.
- Fold the rice paper's bottom side up over the top and start rolling while using fingers to lightly press the ingredients down to make a tight roll.
